Thai Green Papaya Salad with Pickled Crab on the streets of Thailand (Som Tam)

Som Tam is also know as Thai Green Papaya Salad, or Green Paw Paw Salad. Being a traditional northeastern Thailand dish, it is a favorite with Thai bar girls. Som Tam is prepared using a Mortar & Pestle.

You start by adding Red Thai chilies, palm sugar and cloves of garlic and gently crushing them up in the mortar and pestle..

Once you have given them a quick bash, get a long bean or snake bean and breaks it into small batons, then chop in a Thai pink egg tomato followed with a squeeze of lime. Add a pickled crab.

These pickled crabs have a really strong aroma on there own, but once mixed into the salad the strong small is lost amongst the other ingredients.The pickled crab adds a really nice saltiness to the flavor without being to overpowering.

Next is the fermented fish sauce. This type of fermented fish sauce is very common in northeastern Thai cuisine, the region known as Isaan.

Give it a quick mix up using the Mortar & Pestle. The idea is to gently beat the ingredients without crushing them to a pulp.

And last but not least add the shavings of green paw paw, and give it one final round of a beating in the Mortar & Pestle before being serving it up to be eaten.
